In this recipe, sliced pork tenderloin is seasoned with fajita seasonings and cooked with onion and green pepper slices and served wrapped in warm flour tortillas.
SERVES: 4
PREP TIME: 5 Minutes
COOK TIME: 10 Minutes
Ingredients

1 pound pork tenderloin, thinly sliced
2-3 Tbsp. fajita seasoning or marinade
1/2 onion, sliced
1/2 green pepper, sliced
4-6 flour tortillas, warmed

Directions
Step 1  Step 1:
Toss sliced pork pieces with fajita seasoning in a shallow bowl. Stir-fry pork pieces with onion and green pepper in large non-stick skillet over medium-high heat.
 
Step 2  Step 2:
Remove from heat and wrap portions in flour tortillas and serve with salsa.
 

Serving Suggestion: Serving with a side Santa Fe rice and beans, salsa, guacamole, and sour cream, if desired.
